Deliciously decadent bbq stone fruit

Get more out of your BBQ with this super easy and deliciously decadent dessert featuring summer stone fruits. Cooked over a BBQ flame, the fruit takes on a satisfying smoky flavour.

With gas flowing in New Zealand well into the future you’ll be able to impress friends and family with this BBQ recipe for years to come.

Serves 4

  • 4 x your choice of stone fruits, halved, stones removed (peaches, plums, nectarines, apricots*)
     * For smaller fruits you may need more than 4

For the sauce

  • ⅓ cup brown sugar
  • 20g butter, chopped
  • ½ teaspoon cinnamon
  • 1 teaspoon vanilla essence

To serve

  • Your choice of cream, custard or vanilla ice cream to serve

Preheat the BBQ plate and grill on high. Place the fruit on the grill flat side down and cook until the fruit starts to become tender, and flesh is singed slightly. Turnover and do the same to the other side. Cooking time will depend on the size and ripeness of the fruit, as well as your preference).

While the fruit is cooking, put sugar, butter, cinnamon, and vanilla essence in a heatproof metal tray. Place on the plate and cook, stirring until the butter is melted and sugar has dissolved.

Serve with freshly whipped cream, custard, or vanilla ice cream... or if you’re truly decadent, all three and the butter sauce.

Tip: If you don’t mind your BBQ getting a bit sticky, instead of having the butter sauce over the fruit when serving you can marinate in the sauce before cooking.
